Banh Xeo (Sizzling Cake)

Hello! Today, I will be cooking up some banh xeo, also known as sizzling cake in English.xeo It originates from Vietnam. This street food sold by food vendors is very well known and relatively easy to make but not cook. If you don’t like oil being splashed on you, I would recommend you to wear some protective gear, like goggles, gloves, etc. Anyway, let’s get on with the cooking!

You will need

  • Banh Xeo Flour
  • Tempura Flour Mix
  • Water
  • Coconut Milk
  • Pork (Cut into small pieces)
  • Shrimp
  • Bean Sprouts
  • Vegetable Oil
  • Garlic
  • Sugar
  • Vegetarian Seasoning
  • Fish Sauce
  • Pepper
  • Salad (Optional)
  • Mints (Optional)
  • Sauce (Garlic, Sugar, Water, Fish Sauce, Beaten Chili, Lemon Mixed Together (No specific quantities; test different amounts until good tasting))
  • Scallions (Chopped)

Directions (for 20 cakes)

In a big container, add two bags of banh xeo flour, half a bag of tempura batter mix, beer (optional and any quantity desired), 750 ml of water, any amount of coconut milk, and a tiny amount of powdered turmeric, and sliced scallions. In a pan at high, add vegetable oil. Spread around until evenly coated. Add 2/3 of the mixture onto the pan and evenly coat. While it is being cooked, continue to evenly coat for 15 seconds. After that, add shrimp and pork on top. Let it set with lid on until it looks a little golden brown. Every time there is too much water on the lid, take it off and dry it. When it turns a little brown, add bean sprouts. Leave the lid on until golden brown, like stated before. Flip half of the circle onto the other side when it is done. Serve!

Although this dish is a little tedious and requires quite a few ingredients, it’s worth it! See you next time!
